You will learn about how cider is made, its ingredients and how they impact on flavour. You will sample a range of cider styles and pair some of them with different foods. This will equip you with the skills to communicate knowledgeably about cider with customers and consumers and will enhance your professional status in the cider sector.

Advanced Course

The Advanced course significantly expands on aspects of cider styles, tasting, and assessment .

Course objectives:
To develop delegate's:

  • Enhanced understanding of cider:

  • Ingredients and techniques

  • Style and flavour diversity amongst styles

Which enables you to:

  • Appreciate cider with greater breadth and depth than previously.

  • Distinguish between key styles, describe flavours

Course benefits:

  • This will equip you with the skills to communicate knowledgeably about cider with customers and consumers and will enhance your professional status in the cider sector.

Please note you must have passed the Foundation course to attend the Advanced course. Please note you cannot gain exemption from the Foundation.

How To Judge Cider

£130+VAT

A training course designed to help professionals, enthusiasts and beginners understand how to assess and judge the quality and style of a cider. This knowledge can be used to enhance the experience and enjoyment of tasting cider as well as preparing judges in beer competitions for the processes and standards required.

Course objectives:
To develop delegate's:

  • Understanding and correct use of cider terminology

  • Awareness of inappropriate flavour characteristics

  • Ability to identify key cider styles

  • Ability to discriminate amongst ciders of the same style


Which enables you to:

  • Assess and accurately communicate cider characteristics

  • Identify key flavour faults within ciders

  • Guide others and make good cider choices

  • Judge ciders against appropriate style criteria and select a worthy "winner"

Course benefits:

  • Will enhance the experience and enjoyment of tasting cider as well as preparing judges in cider competitions for the processes and standards required.

Please note you must have passed the Foundation and Advanced course in order to attend the How to Judge cider course.

Beer and Cider Academy Pommelier

 £225+VAT

This scheme offers recognition of a significant depth of knowledge of cider styles and cider and food matching for successful candidates. You will become an ambassador with the knowledge, communication skills and, most importantly, the passion to inspire people to discover, respect and enjoy this revered beverage.

The Beer & Cider Academy Accredited Pommelier Scheme Requirements

Qualification Scheme:
Prospective candidates that wish to become Beer and Cider Academy Registered & Accredited Pommeliers must;
Complete an application form and confirm that:
1.    They have attended and passed the Beer and Cider Academy Foundation in Cider Course
2.    They have attended and passed the Beer and Cider Academy Advanced in Cider Course
3.    They have attended and passed the Beer and Cider Academy How to Judge Cider Course

Portfolio of Evidence (PoE)
With the application form the applicant must provide a PoE of their practical competence. The PoE will form three parts:

 Cider Advocacy

  • Evidence/creation of cider menus or other similar schemes for use at retail level.

  • Evidence of the use of cider ranging in retailing.

  • Evidence of high cider retailing and image standards through POS, branded glassware, cellar hygiene standards and other relevant evidence.

  • Evidence of effective branding and marketing of products with appropriate cider lexicon

 Cider & Food

  • Evidence of food matching opportunities OR creation of degustation menu

 Personal Project

  • Paper-based exercise to demonstrate understand of language, styles, marketplace and consumers

Beer and Cider Academy Pommelier Assessment:

  • Applicant submits POE and evidence of qualifications

  • Applicant pays an application fee of £225 (GBP) +VAT.

  • Applicant is invited to attend an interview (viva voce) at The Beer and Cider Academy and is assessed via an evidence-based process against written parameters.

  • The assessment will test all parts of the Beer and Cider Academy Courses and may include practical tests including identification of randomly selected cider styles and faults, category and legislation understanding and role play scenarios

  • Successful candidates will be provided with a Certificate upon request and a soft copy of the Beer and Cider Academy Cider Pommelier badge/logo.

  • Successful candidates will be entered into the register of Beer and Cider Accredited Cider Pommeliers
